Barbecue sauce from Bull Head is coarse light brown oil-based sauce with a mixture of soybean oil, dried fish (brill fish/lizardfish), garlic, ginger, shallots, sesame, coconut powder, dried shrimp, chili powder, salt, and pepper. It has a predominant savory and require mixing prior to use.
It has strong pungent odor (fermented), some people may think it is rotten but it is not due to fermentation of the dried fish and dried shrimp which adds a umami flavor. A little dab goes a long way. Must mix it with other ingredients as it is not meant to be consumed as is.
Ideal dipping for Hot Pot/Shabu Shabu, for Chicken on a Stick, Sha Cha Beef etc.
